I'm trying to do a little planning ahead for the next few months and thinking I could save some time by preparing some meals now. I'm just imagining how crazy that 4:00 -5:30 dinner hour stretch is going to become in the next few months and trying to salvage some sanity now while I still have some. So I'm looking for some good freezer meal recipes - anything that still tastes good after being kept in the freezer and is easy to reheat. I have not tried much of this style of cooking, but thought I might give it a go since I was going to pre-cook some chicken and hamburger and have it ready to go in the freezer for some quick meals anyways. I've found a few recipes that sound promising on the internet, but it's always better to get tried and true ones from people you know.
So if you have any yummy recipes for the freezer - share away! Or even if you don't, just tell me what your favorite quick meal to cook for your family is. *Quick as in you have a 2 1/2 year old pulling on your leg and zooming cars around your feet, and two babies waiting for someone to come feed-change-hold them.

A lot of soups freeze well. Spaghetti sauce w/ meatballs or meat in it would freeze good. My SIL freezes manicotti a lot... that's all I've got.
count on bri's general tso/fried rice one night after the babe's are here.(i'll even make the PBJ for morgan/kendle that night!:) :) don't forget you'll have kendle to help raise those boys! who's your VT's so we can let them know? or i can coordinate...
Nat-
I know we'll be getting meals from sisters in the ward, and then it will be Thanksgiving and my mom will stock me up with tons of leftovers, I'm just thinking beyond that when things start to get back to "normal" and we're back to fending for oursleves. HA. I will NOT say no to Brian's chicken and rice. Yummo!
I don't having any really good ones. But have always wanted to be better at this type of cooking/preparing as well. I'll be checking back to see if you or someone else has any good recommendations!!
ps. Morgan and Kendle were TOO CUTE in their Halloween costumes.
I went to a class this summer that Valerie taught about freezer meals and there are some great recipes there. Also, dough like for rolls or pizza and another one for a waffle recipe where you can make them and freeze them like Eggos, good for a quick morning breakfast, or breakfast for dinner like we do sometimes.
I'll make you a copy and bring it over some time this week.
I've never once put together a freezer meal... so not much help here.
Some fast easy meals: meatball subs (use the crockpot), grilled ham and cheese, KFC bowls, and lots of soups! It will be winter after all. Maybe instead of a baby gift I'll bring you a freezer meal. ;)
I've never made a freezer meal either, but I do have a recipe for BBQ Meatballs that freezes well. You just make the meatballs, store them in a gallon ziploc bag in the freezer and when you're ready to use them, pull them out, let them thaw and top them with the sauce, then just pop them in the oven.
(this recipe is quite big, so I always split it up between two meals)
2 lbs ground beef
2 eggs
2 cups quick oats
1 cup minced onion
1 cup milk
1 tsp black pepper
Combine everything, and form your meatballs. (I use a cookie scoop, then I don't have to touch the meat) Place in a greased 9x13 pan and top with the following sauce
3 cups ketchup
2 cups brown sugar
3 Tbsp Liquid Smoke
1 tsp salt
Just combine all of the ingredients for the sauce and mix well before pouring over meatballs. Bake @ 350 for 1 hour. Serve over rice.
If you're going to freeze the meatballs, don't make the sauce until you're ready to bake them.
I'll look through my recipes and see if I have anything else that would work.
I like to make meatballs and freeze them. One of the tricks I learned from Valerie. I need some of Brian's food when you have those babies. Nat, just add our house to your stop! :) Tuna Casserole is always a quick meal for me, or Shepherd's pie!
Don't forget ol' tator tot cassarole!!!
I will email some receipes I have made, though I haven't exactly tried all of them yet but most of them turned out really good. ALso email Valerie and see if she has the receipes from her freezer meal class that she could email you. Hers are really yummy! If she doesnt I will photo copy the ones I have. One thing that didn't turn out well for me was enchiladas. The tortillas were really soggy! yuck
Yeah, I've never done this before either, but always thought I should try it. Valerie is the pro I know of. Let us know what works for you!
